- 2 cups flattened rice (poha)
- 1 large potato, peeled and diced
- finely chop 1 onion.
- 1/2 cup green peas
- 1/4 cup peanuts
- 2 green chilies, finely chopped
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 8-10 curry leaves
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Instructions:
- Rinse Poha:
- Rinse the flattened rice (poha) under cold water in a sieve or colander. Gently wash and let it soak for about 5 minutes until it becomes soft. Drain the water and set aside.
- Prepare Vegetables:
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.
- Add chopped onions and green chilies. Sauté until the onions become translucent.
- Add Potatoes and Peas:
- Add diced potatoes and cook until they are slightly tender.
- Add green peas and cook for a few more minutes until the peas are cooked.
- Seasoning:
- Add turmeric powder and salt. Mix well to coat the vegetables.
- Add Poha:
- Add the soaked and drained poha to the pan. Gently mix everything together, ensuring the poha is well coated with the turmeric and takes on a yellow color.
- Cooking Poha:
- Cover the pan and let it cook on low heat for 5-7 minutes. This allows the flavors to blend, and the poha to cook thoroughly.
- Garnish and Serve:
- Once the poha is cooked, add peanuts and mix well.
- Garnish with fresh coriander leaves.
- you can also add desiccated coconut on top.
- Serve hot, garnished with additional coriander leaves and lemon wedges on the side.
