  • 2 cups flattened rice (poha)
  • 1 large potato, peeled and diced
  •  finely chop 1 onion.
  • 1/2 cup green peas
  • 1/4 cup peanuts
  • 2 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Rinse Poha:
    • Rinse the flattened rice (poha) under cold water in a sieve or colander. Gently wash and let it soak for about 5 minutes until it becomes soft. Drain the water and set aside.
  2. Prepare Vegetables:
    • Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
    • Add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.
    • Add chopped onions and green chilies. Sauté until the onions become translucent.
  3. Add Potatoes and Peas:
    • Add diced potatoes and cook until they are slightly tender.
    • Add green peas and cook for a few more minutes until the peas are cooked.
  4. Seasoning:
    • Add turmeric powder and salt. Mix well to coat the vegetables.
  5. Add Poha:
    • Add the soaked and drained poha to the pan. Gently mix everything together, ensuring the poha is well coated with the turmeric and takes on a yellow color.
  6. Cooking Poha:
    • Cover the pan and let it cook on low heat for 5-7 minutes. This allows the flavors to blend, and the poha to cook thoroughly.
  7. Garnish and Serve:
    • Once the poha is cooked, add peanuts and mix well.
    • Garnish with fresh coriander leaves.
    • you can also add desiccated coconut on top.
    • Serve hot, garnished with additional coriander leaves and lemon wedges on the side.
